I mean, I fell in love the minute I saw the colour of these. Come on. how could you not be. It all started on Gili T where we had the best hostel owner, I mean, THE BEST, who turned out not only to be our hostel owner but friend. Anyway, he got us the most incredible mango and dragon fruit smoothies on the pier and its was the most delicious smoothie I’ve ever had, he couldn’t have picked a better smoothie, ok if he arrived with something with say passionfruit quite possibly, but this, YES. I remember the colour and Jesus it tasted incredible.
I also sat on the side of a pool in Canggu, cut open a dragon fruit and ate it with a spoon with the funniest guy I know, that’s life right there. It’s those small moments that turn into the big moments. Those dragon fruit were good but the memories are great + I don’t even care how cringy that is but yep it’s definitely the little things. OR things that seemed small at the time turned out to be one of the best memories. Anyway, if you can get that pink, glorious dragon fruit, make this, or try it with the white fleshed stuff and let me know how it goes. Like I mean, if I were you I’d fly to Indonesia just for one of these, but you do you!
So I couldn’t not do what I do, and recreate this adventure. I hope you love this smoothie bowl as much as I do. simple but delicious. + if you get your hands on pink fleshed dragon fruit in Ireland can you post me some? thanks.
- 2 bananas
- 1 dragon fruit
- 100g frozen mango
- 2 tbsp cashew butter
- 1 kiwi, peeled and sliced
- 100g granola
Peel a banana and slice, pop into a zip lock bag and freeze for at least 3 hours.
Once frozen, pop into a nutribullet with the flesh of the dragon fruit, mango and blend until smooth and serve in a smoothie bowl. top with the remaining banana sliced, cashew butter, kiwi and granola.
