I know someone that when he takes cookies, he takes like 5 at a time, there’s a knack though + eventually I figured him out. you hold the cookies you aren’t eating in your palm and nobody knows how many you’ve taken!! (sample image below) He was a serious Jaffa thief, yeah I know all the tricks but honestly my body couldn’t handle all the choccy hobnobs or Jaffa cakes so I’ve made these, so and now I can have my cookies + eat them too!! Plus I’m always on the go so these are ideal for getting protein in when I’m legging it around.
Makes 8 cookies
- 1 tbsp chocolate hazelnut butter
- 1 tbsp maple syrup
- 75g blueberries
- 50g vegan chocolate protein powder
- 25g oats
- 2 egg whites
Preheat oven to 180C/350F.
Mix the hazelnut butter and maple syrup together in a bowl until smooth, no lumps. mix through the remaining ingredients. Divide into 8 cookies onto a tray lined with parchment paper, shaping + flattening a little as you go.
Place in the preheated oven for 10-12 minutes until golden and cooked through, they will rise a little as they cook.
Allow to cool or dig in straight away.
