Pan brownie

What’s life without brownies. not one I wanna live anyway.

Finally getting back to doing a little shooting and recipe creation for myself and it feels good. I had this in mind for a while but when jobs take over writing about brownies and melting ice cream is not high on the priority list. I added fudge to this. so it’s one you need to eat while hot, like straight out of the oven to the table… or your lap. There’s no judgment here, and frankly, I don’t blame you if you do. ice cream + brownies are always a winner.

Do me a favour, get a good quality ice cream, though, there’s no time for half measures in my book. Give this a go, g’wan g’wan.

  • 125g butter
  • 100g milk chocolate
  • 125g caster sugar
  • 150g fudge
  • 25g cocoa powder
  • 100g self raising flour
  • 1/2 tsp baking powder
  • 100g white chocolate, chopped into chunks
  • pinch sea salt

Preheat the oven to 180°C/350°F/Gas Mark 4.

Melt the butter and chocolate together in 30 second intervals in a microwave, taking care to not over-heat or in a bowl over a Bain Marie.

Mix in the remaining ingredients using a spatula. transfer to the greased pan and into the oven for 20 minutes until cooked but still a little soft. serve with ice cream while still warm.
