Easter Reese Cookies
SAY NO TO EASTER EGGS. honestly, Easter eggs just don't do it for me, a hollow piece of shit chocolate isn't something that gets me going. not to mention all that excess packaging and the fact you can only fit one per shopping bag, they take up half the bleedin' trolley if you had to buy them for the whole family. I'll have a brownie or even fulfil bar over one thanks. But, I have, in fact come up with an easter egg alternative, it involves non-hollow eggs, filled with peanut butter, and cookies. yep, Reeses peanut butter cookies.
I'll have one of these for easter please and thanks. forget about waiting for these bad boys to cool. Lash the kettle on before the 10 minute timer is up, make a cup of tea and grab a family member, or not.
Makes 8
Ingredients
100g butter
75g caster sugar
100g Self raising flour
150g plain flour
1 large egg, lightly beaten
1tsp baking powder
Pinch salt
100g milk chocolate, roughly chopped
4 reeses eggs, halved
How to
Heat the oven to 180°C/350°F/Gas Mark 4.
Place the butter and sugar in a stand alone mixer. beat together, but only to combine. Add the flours to this followed by the egg, baking powder, salt and milk chocolate. mix to combine.
Divide the mix into 8, shape into balls and arrange between two baking trays, lined with parchment paper. top each cookie ball with a Reeses egg half, cut side facing up. sprinkle with a little extra salt if you like. if you have time, freeze these for 1 hour before putting them in the oven, if not, they'll be just as tasty.
Place the trays into the oven and bake for 10-12 minutes until golden. they should still be a little soft when you remove them. Allow to cool for a few minutes before transferring to a rack to cool completely, or, skip the last step and like me, eat hot straight from the oven.
