Funfetti Mini Egg Cookies
COOKIES. these cookies, give them a little love, they won’t consume all your time an energy. quick cookies if you want a sugar kick. give them some time in the freezer so they hold their shape when they’re baked.
there’s not much else to them really.
I guess. you could use soft light brown sugar also, if you want. I love the flavour the dark brown gives, kind of caramel.

Cooks in: 12 minutes
125g dark brown sugar
175g caster sugar
175g butter, melted
1 large egg
2 tbsp golden syrup
1/2tsp sea salt
275g self raising flour
200g white chocolate, chopped
50g sprinkles
24 mini eggs
Sea salt flakes
Add the sugars to a freestanding mixer with the butter. Beat until well combine. Add in your egg, mix so it’s incorporated. Scrape down the sides of your bowl. Beat in your golden syrup and salt.
Add the flour mixture to your dough, beat to combine, make sure not to over mix. Fold in your chopped chocolate and sprinkles.
Divide the mix into 12 balls and roll to shape. Arrange on a tray lined with parchment paper as you go. Stud with the mini eggs and sprinkle lightly with salt. Freeze for at least an hour.
Heat your oven to 180c.
Bake for 12 minutes or so, until golden and mostly set but not browned. Allow the cookies to cool slightly on your baking sheets for 5 minutes or so, before moving them to another surface to cool completely.
