3 P PASTA

The bloomin’ easiest pasta dish yo’ gonna make. I’m writing as I hear it in my head, I am VERY excited to share this. I think we’re all so busy but we want something tasty, to hit the spot on these cold evenings. I don’t eat pasta often, but if I am, it’s gotta be insanely good.

The trick is not to overcook your pasta, it’ll continue to cook even as you swirl it through the sauce. Get yourself a really great quality pasta + parmesan + only used crushed black peppercorns. I like to bash mine in a pestle and mortar but you do you. Parmesan, go for the good stuff.

50g butter

1 tbsp black peppercorns, crushed

50g parmesan, finely grated (rind also if you like)

150g pasta (doesn’t really matter the type)

large handful parsley, roughly chopped


  1. Bring a large pot of water to the boil and salt well.

  2. Heat a heavy based pan over, not too high a heat, I kind of feel unsure by saying low, medium or high, I guess it depends on your hob really. once it’s warm add the butter, we don’t really want browned butter, but not the end of the world if it goes there. Once bubbling add the pepper and give it a minute to turn fragrant. I LOVE the smell here, soak it up.

  3. transfer a small bowl of pasta water from, dun dun dun, the pot of boiling pasta to the heavy based pan with the pepper. Add half the parmesan + stir though. bubble a little to let it reduce.

  4. Drag across the pasta + toss it in the sauce. Stir through the parsley and serve.
