Five Spice Spatchcock
This bird basically butchers itself. Because the flavours on the skin and chicken are strong punchy flavours I love to serve it with some crunchy cucumber, the acidic from a bit of pickle + some crusty bread with this is the best.
This would be a a perfect midweek meal, I don’t want an excuse it takes 45minutes, by the time you get in, lash it in the oven + have a shower it’ll be good to go.
Ingredients
1 spatchcock chicken
2 tbsp five spice powder
2 tbsp olive oil
2 tsp sea salt flakes
crusty bread + something green to serve
Heat oven to 220C.
Pop the chicken onto a roasting tray and flatten out. stir the five spice, olive oil and salt together in a small bowl. Smear across the bird. Rub over the top and under + in every little crevice.
Put it in the oven for 40-45 minutes. Don’t bother peeking, let it do its things.
Serve with something simple, or whatever you fancy. chilli oil + Crusty bread would be just fine.
