Whipped Whiskey Butter
You know when you have a warm mince pie, and then top it with brandy cream or butter and it just melts into it and it’s all oozey and delicious. yeah, this is what’s happening here, except it’s better because, well, whipped butter is all light and fluffy and then you bite into it and it just melts away. It pools into the mince meat and crunchy mince pie crumble like you would into a warm bath or into the sea, somewhere hot, let’s pretend we’re in Bali for a bit. but yeah, whipped butter is the best.
225g butter
4tbsp fireball whiskey
6tbsp icing sugar
Add the butter, whiskey and sugar to a freestanding mixer.
Beat over a high speed until it has increased in volume, it should be light in colour and fluffy. This will take about 10 minutes.
