Coconut + almond granola

It would be really great with hazelnuts too. it’s so important to use what nuts and bits you already have lingering in the back of your press, I clearly had coconuts and almonds but hazelnuts and poppy seeds, now that `I think of it, would be such a yummy combo.

Don’t let them burn, or really, don’t let them brown too much, it tastes dirt when this happens, like, bitter, it’s not nice anyway.

If you have honey instead of maple, that’s cool too. Lets not complicate something that’s super simple.

makes 2 large jars.

400g jumbo oats

100g almonds, roughly chopped

125g coconut chips

2 tbsp dark brown sugar

200ml maple syrup

50ml coconut oil, melted

Put the oven on to 180c and let it come up to temperature.

Stir together all the ingredients, season with a little sea salt, bung them onto the tray lined with parchment paper, you’ll need a pretty large one. pop in the oven for 10 minutes, toss and return to the oven for another 10. the nuts and oats should be lightly golden. if they go too dark they'll taste bitter. leave to cool, but don’t stir before it has, this will give you more oaty, nutty clusters.

I put mine into tight sealed jars with a mini scoop. it’ll last for a good bit in those, if you don’t eat it all in a week like me.
